Vegetable upma

Upma is a quick and delicious comfort food that it is prepared in every household at least once in a week, which is made in sooji or semolina or Rava. Added to this we can use vegetables like carrot, beans, peas, potato. We can have this dish for breakfast, brunch or snacks or dinner. This is such a delicious and nutritious too as we are adding vegetables to it. This recipe is very easy and it goes here:
Ingredients:-
Carrot – 1
Beans – 4
Peas – ¼ cup
Coriander leaves – to garnish
Sooji/rava – 1 cup
Green chili – 3
Onion – 1 cup
Cashew – 3
Water –2 cups
Oil – to taste
Mustard seeds – ½ tsp
Channa dal – ½ tsp
Urad dal – ½ tsp
Curry leaf – 1 spring
Salt – to taste
Method:-
Heat oil in a pan and once it is heated up add channa dal, urad dal, mustard seeds. Allow mustard seeds to splutter and add curry leaves. Then add onion, green chilies, vegetables(cut into small pieces) and fry till the vegetables are half cooked. Once it is done add water and salt to the mixture and allow it to boil. When the mixture started to boil add sooji slowly and stir continuously; make sure there should not be any lumps. Keep stirring it for 3 mins on low heat. Switch off the stove and serve hot with chutney.
Note:
Same method for the seemiya/vermicelli upma. You should replace upma (Rava)/sooji to seemiya for it.
