This is a great option for Eggitarian. It tastes very good and you can also change or add any ingredients. You can serve with chutney or any sambar.

Ingredients:-
Egg – 2
Pepper – ¼ tsp
Salt – to taste
Method:-
Mix all the ingredients in a bowl and mix it well (egg should be well beaten). Heat a paniyaram pan and add little oil in each pan and then pour well beaten egg mixture.

Once the egg paniyaram is cooked on one side turn it carefully to other side. Cook till it is done.
Optional: - You can mix the egg into idly batter and pour into paniyaram pan & cook.
You can also add onion and green chili.

This would be a healthy paniyaram as we use many vegetables in it. You can serve with coconut chutney or any gravy.

Ingredients:-
Idly batter – 2 cups
Small onion – 25 or you can use 1 big onion
Green chili – 3
Curry leaves – 2 springs
Coriander leaves – 2 to 3 springs
Shredded carrot, cabbage and potato – 1 cup
Oil – as needed
Method:-
Finely chop onion, green chili and curry leaves and coriander leaves and mix it with idly batter. Same way mix all the vegetables with idly matter. Heat a paniyaram pan and add little oil in each pan and then pour idly batter mixture.

Once the paniyaram is cooked on one side turn it carefully to other side. Cook till it is done.
Note: – shredded vegetables help to cook easily and quickly. I like to use fewer vegetables in paniyaram.
