Ingredients:-
Carrot – 1
Beans – 6
Peas – ¼ cup
Cauliflower – ¼ cup
Potato – 1
Onion – 1
Tomato -1
Cumin seeds -1/2 tsp
Green chilies – 2
Chili powder – 1 tsp
Chicken masala – 1 tsp
Garam masala – ½ tsp
Water – 1 -1 ½ cup
Salt – to taste

Method:-
Cut all the vegetables into medium size and keep aside. Heat oil in a pan and add cumin seeds and allow it to splutter. Once it is done add onion, green chilies and fry till it turns into translucent and then add tomatoes and cook till it turns into soft. Then add all the vegetables and cook for 2 minutes and then add chili powder, chicken masala and water and allow these mixtures to cook till the vegetables done. 
Then add garam masala, salt and cook for another 3 minutes and serve hot with chappathi or roti.
Note:
You can pre-cook the vegetables as it saves the time and helps to cook fast.

Palak paneer is a famous North- Indian dish prepared with spinach and Indian cheese. Instead of Indian Cheese – Paneer I have used Aloo (potato) here and added some heavy cream to give richness to the dish.

Ingredients:-
Spinach – 1 bunch
Potato – 2
Cumin seeds – ½ tsp
Onion – 1 (medium size)
Tomato Puree – ½ cup
Green chilies – 3
Ginger, garlic paste – 1 tsp
Turmeric powder – ¼ tsp
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Chili powder – ½ tsp
Ghee – ½ tsp
Heavy cream – 4 Tsp or less than ¼ cup
Milk – 2 tsp (optional)
Method:-
Grind the spinach, green chilies in a mixer and make a fine paste.

Cook the potato and cut into cubes and keep aside. Heat ghee in a pan and once it is heated up add cumin seeds and allow it to splutter. Then add ginger, garlic paste and fry for few minutes and then add onion and fry till it turns into translucent. Once it is done add tomato puree to the mixture and cook for 3 minutes and then add all the masalas’ (cumin powder, coriander powder, turmeric powder, chili powder) and fry till the raw smell goes and then add grounded spinach and cook for 7 – 8 minutes and then add salt, potato and cook for 3 – 5 minutes. Finally add milk and heavy cream to the mixture and cook for a minute and serve hot with chappathi or rice.
