Egg Beans Subji

Posted by Geetha on December 8, 2008

Usually while doing beans subji we use to add coconut in the end, instead of coconut we can add egg. This is very simple and delicious dish.

Beans (finely chopped) – 2 cup

Egg – 3

Onion – 1

Green chili – 4

Pepper – ½ tsp

Salt – to taste

Lemon juice – 2 tsp

Channa dal – ½ tsp

Urad dal – ½ tsp

Mustard seeds – ½ tsp

Beat well the egg and add pepper and keep this aside.

Heat oil in a pan and once it is heated up add channa dal, urad dal, mustard seeds. Allow mustard seeds to splutter and add onion, green chili and fry for few minutes. Once it is done add finely chopped beans, salt and cook till beans become soft.

Then add egg to the beans mixture and cook till the raw smell goes. Fry these mixtures for 5 – 8 minutes and serve hot with any rice or chappathi.
