Black Gram Dal Vadai (Ulunthu Vadai/ Medhu Vadai)

Ingredients:-

Urad dal – 1 cup

Onion – 1 or 2

Green chili – 2

Ginger – 1’ inch

Salt – to taste

Hing – 3 to 4 pinches

Pepper – to taste

Curry leaves – 2 springs

Coriander leaves – 4 springs

Oil – to deep fry

Water – ¼ cup

Method:-

Soak urad dal for 1 hour and then wash it and grind by sprinkling little by little water and make a paste. Then add finely chopped onion, green chili, ginger, curry leaves, coriander leaves, pepper, salt, hing to the grounded paste. Once it is done mix all the ingredients well and allow this mixture to sit for 15 mins.

Then beat the mixture well to evaporate the moisture to make a good Vadai. Wet your palm with little water/oil and take a small amount of batter into your palm, flatten it lightly, shape into a circle and make a hole in the center.

Drop these shaped Vadai into hot oil, turning one in a while and deep fry till it turns into golden brown. Remove from heat and drain on a paper towel and serve hot with sambar, chutney.
