Papdi/ Papri Chaat

Posted by Geetha on December 12, 2008

Papdi refers to crispy fried dough wafers made with from refined white flour and oil. In papdi’s chaat, papdi is served with boiled potatoes, boiled chick peas, chilies, and yoghurt and tamarind chutney and topped with chaat masala.

All purpose Flour – 1 cup

Sooji or rava – ½ cup

Salt – ½ tsp

Oil – 2 tsp

Water – 1/3 + 2 tsp oil

In a bowl mix all the ingredients and form dough. Add water little by little and make like chappathi dough. Once it is done cover the dough and set aside for 15 mins. Divide the dough into 3 equal parts. Take one part of the dough and roll into 8 ‘diameter and pork the dough with fork into every place (so that it won’t puff like poori). Once it is done cut in about 1 ½ inch squares with your knife (just horizontal and vertical lines). Heat oil in a pan and once it heated up fry these papdi‘s until both sides turn into light golden brown. Continue the same method for rest of the dough. You can serve with whatever I said or you can do any combination for this recipe.

Note: – don’t over crowd the papdi while frying.
