Potato with Egg plant

Brinjal gravy



Potato – 2

Egg plant – 1

Cherry tomatoes – 1 pint

Peas (frozen) – ½ cup

Mint leaves – ½ cup

Salt – to taste




Cook the potatoes and keep aside. Cut the egg plant, cherry tomatoes into small pieces and bake at 400 degrees for 30 – 35 minutes or until it turns into golden brown. Then grind them with mint leaves, olive oil and make a paste. Once it is done, heat oil in a pan and add the grounded paste and fry till the raw smell goes. Finally add potatoes, peas, salt and mix it well and serve hot with chappathi.
