Brinjal Mash/ gravy

Brinjal – ½ kg

Onion – ½ cup

Tomato – 1

Green chili – 2

Chili powder – 1 tsp

Coriander powder – 2 (or 3) tsp

Turmeric powder – ½ tsp

Salt – to taste

Oil – 1 tsp


For seasoning:-

Channa dal – ½ tsp

Urad dal – ½ tsp

Mustard seeds – ½ tsp

Curry leaf – 1 spring





Heat oil in a pan and once it is heated up add channa dal, urad dal, mustard seeds. Allow mustard seeds to splutter and add curry leaves. Then add onion, green chilies and fry till the onion turn into translucent. Once it is done add tomato to the mixture and sauté till it turns into soft and add brinjal, turmeric and mix it well. Fry these mixtures for 2 mins and add the remaining masala, salt and add enough water to cook the vegetable. Once the vegetable cooked remove from heat and garnish it with coriander leaf. This gravy goes with plain rice.
