Potato Puli Kolumbu

Ingredients:-
Potato – 4 (peeled and cut into small pieces)
Onion – 1
Tomato – 1
Tamarind – small lemon size
Chili powder – 2 tsp
Coriander powder – 3 tsp
Turmeric powder – ¼ tsp
Oil – 1 tsp
Hot water – 3 cups
For Seasoning:-
Curry leaves- 6
Mustard seeds – 1 tsp
Cumin seeds – ½ tsp
Urad dal – ½ tsp
Method:-
Soak tamarind in a how water and squeeze the water from it. Heat oil in a pan and once it is heated up add all the “seasoning Ingredients” and allow it to splutter. Once it is done add Onion and fry till it turns into translucent and then add tomatoes and fry till it turns into soft and mushy. Then add potatoes, turmeric, chili powder, coriander powder and fry for 2 mins. Once it is done add tamarind water and salt. Allow this mixture to boil and once it starts to boil, simmer the heat and cook till potatoes are cooked. You can add more water if you need. Finally garnish it with coriander leaves and serve hot with rice, chappathi.
